Cold Soluble Gelatins

There are applications where the heating stage required to dissolve gelatin complicates the processing or preparation of a product. In some applications, a heating stage is not required at all during the preparation.

PB was the first gelatin producer to introduce cold soluble gelatin on the market and is still market leader for these specialty gelatins. Our cold soluble gelatins have exactly the same textural properties as traditional gelatin, which means that the unique melt-in-the mouth effect, texture and consistency remain unsurpassed.

We sell two ranges of cold soluble gelatins under the brand names CRYOGEL® and INSTAGEL®. They can be obtained in a bovine or porcine version.

CRYOGEL® and INSTAGEL® will start dissolving when they come into contact with a cold liquid (water, milk, fruit juice...). As there is no heat involved in the preparation, the effect on the viscosity will be immediate, thickening or aerating the preparation. As it concerns a cold preparation, gelling/stabilization will start fairly soon after preparation. Because of this, the finished product may be consumed much sooner than would be the case with traditional gelatin, which requires a longer cooling period.

This all means that CRYOGEL® and INSTAGEL® stand for: 

• Simplification of the preparation;
• Time, labour, energy and equipment savings (by skipping the hot dissolving step);
• High product quality (melting off, texture and mouth feel identical to hot soluble gelatin);
• Quick preparation;
